Last week, we presented you with a challenge: show us can you do with three simple ingredients – tomato, chicken and rice. We received dozens of delicious submissions in response – everything from curry and paella to chicken cacciatore and stir fry.
Needless to say, it was incredibly difficult to pick only two winners! However, two entries in particular stood out to us based on their creativity, photography and detail provided. Without further ado, the winners of the Back to Work Supercook Challenge!
1st Place Winner: Stuffed Bell Peppers
I used the Simple and Easy Stuffed Peppers recipe from Supercook to help me create this amazing dish. I changed the meat to ground chicken. I also used fresh tomatoes that I grilled to give a freshness to the dish. The Garam Masala seasoning goes wonderfully with chicken and this added a little Indian flavor. Using brown rice lessened the calories for the recipe and is healthier than white rice. I decided to use green, red, orange and yellow bell peppers to offer different taste to each serving but also visual appeal.
2nd Place Winner: Tomato Basil Chicken Cacciatore
Conveniently, [tomato, rice and chicken] are three of my favorite ingredients of all time. Entering them into Supercook’s website opens up over two dozen options… a recipe for chicken cacciatore catches my eye. With a few more ingredients I have on hand from an abundant harvest (fresh basil, yum!), I know this is what’s happening for dinner.
The recipe is for chicken cacciatore in the crock pot, which is even better for busy working adults! But, it had to be made tonight, and that meant on the stove top. Keep in mind you can indeed take all the ingredients and simply chuck it in the slow cooker for a truly hands-off meal…

Honorable Mention: Chicken Tikka Masala
This is my entry for the Supercook Challenge, inspired by a bunch of different recipe versions. I combined multiple recipes to create my own version, and it turned out pretty delicious! I love that curries have so much flavor from spices, rather than oil or sugar!
Honorable Mention: Chipotle Chicken & Pineapple Salsa with Coconut Lime Jasmine Rice
The three recipes I worked from were Chipotle Chicken Skillet, Cilantro Lime Rice and Fresh Pineapple Salsa. I love finding recipes on www.supercook.com and altering them to see if I can create a dish everyone will enjoy. Experimenting with different flavors to get the yummy taste to a dish is a rewarding experience. Grilling the chicken and the pineapple gave these dishes a fresh outdoor flavor. Coconut milk added a new sweetness to the rice.
Honorable Mention: Mediterranean Chicken
This recipe is inspired by the Easy Mediterranean Chicken recipe found on Supercook. With work/school back in session, I wanted to find something that could be relatively quick to make, so on Supercook I hit “Quick & Easy” under meal type. This dish is designed to be made in one pot (LESS DISHES!!) and I made it in 30 minutes including prep time. The dish was super flavorful and very healthy.
